Blackberry Compote Cheesecake Recipe

There is something especially rewarding about turning freshly picked berries into dessert.

After our recent visit to Oneal Berry Farm in Royse City, we returned home with a basket of ripe blackberries and plenty of inspiration for the kitchen. While cobbler and Blackberry Lemon Ice Cream Pie remain family favorites, this Blackberry Compote Cheesecake has quickly earned a place among our summer dessert traditions.

The creamy cheesecake paired with a bright homemade blackberry topping creates a beautiful balance of richness and fresh fruit flavor. Whether you gather your berries from a local farm or pick them up fresh from the market, this recipe makes a lovely dessert for entertaining, holidays, or simply slowing down to enjoy a sweet slice of summer.

Ingredients

Graham Cracker Crust:
  • 6 tablespoons unsalted butter
  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons sugar
  • Pinch fine salt
Cheesecake Filling:
  • Four 8-ounce packages cream cheese, at room temperature
  • 2 cups sugar
  • 1 cup sour cream
  • 2 tablespoons pure vanilla extract
  • 4 large eggs, at room temperature

Directions

Step 1: Prepare the Oven and Pan

Position a rack in the center of the oven and preheat to 325°F.

Place the butter in a microwave-safe bowl, cover with a paper towel, and melt using 10-second intervals. Brush a 9-inch springform pan with some of the melted butter.

Step 2: Make the Graham Cracker Crust

Stir together the remaining melted butter, graham cracker crumbs, sugar, and salt until combined.

Press the crumb mixture evenly into the bottom of the springform pan, making sure the crust reaches the edges.

Bake until lightly golden, about 15–18 minutes. Remove and allow the crust to cool.

Place the springform pan onto a large sheet of foil and wrap the sides securely. Set inside a roasting pan.

Step 3: Prepare the Cheesecake Filling

Using an electric mixer on medium speed, beat the cream cheese and sugar for about 1 minute until smooth.

Add the sour cream and vanilla extract and mix until just combined.

Add the eggs one at a time, mixing gently by hand after each addition.

Tip: Avoid overmixing. Too much air in the batter can cause the cheesecake to puff and crack during baking.

Pour the batter over the cooled crust and smooth the top.

Step 4: Bake Using a Water Bath

Pour hot water into the roasting pan until it reaches about halfway up the sides of the foil-wrapped springform pan.

Bake until the outer edge is set but the center still has a slight jiggle, about 1 hour 20 minutes.

Turn off the oven and leave the cheesecake inside for 1 additional hour.

Remove the cheesecake from the roasting pan and place on a cooling rack.

Run a knife gently around the edges and cool to room temperature. Cover and refrigerate for at least 8 hours before serving.

Step 5: Unmold and Prepare for Topping

Run a knife around the pan one more time and unlock the springform pan to release the cheesecake.

Transfer to a serving platter or cake stand and smooth the sides if desired.

Fresh Blackberry Compote Topping

One of the reasons we love this topping is its versatility.

You can keep it rustic and chunky, partially blended for a compote texture, or create a silky smooth blackberry sauce depending on your preference.

  • 3–4 teaspoons lemon juice

How To Make Blackberry Compote

Step 1: Build the Blackberry Base

Combine the blackberries, water, sugar, lemon zest, and lemon juice in a saucepan.

Step 2: Gently Cook the Berries

Place the saucepan over medium-high heat and bring the mixture to a gentle simmer.

Once simmering, reduce the heat to low and cook for approximately 10–12 minutes.

Stir every few minutes to prevent sticking or scorching.

The berries will soften and begin releasing their juices, creating a naturally vibrant sauce.

Step 3: Adjust the Consistency

This is where the compote becomes customizable.

Our favorite method is to blend half of the cooked berry mixture until smooth, then stir it back together with the remaining whole berries.

Gently mash some of the berries with a fork and warm the mixture briefly over low heat to marry the flavors.

The result is a beautiful blackberry compote with both smooth richness and fresh berry texture.

Step 4: Cool and Serve

Allow the compote to cool completely before spooning it over the chilled cheesecake.

For garnish, we enjoy adding:

  • Fresh blackberries
  • Mint leaves
  • Extra lemon zest, if desired

Blackberry Compote Tips

Should You Soak Fresh Blackberries?

If you are using berries from an organic source or are uncertain about handling conditions, soaking can help remove tiny insects hiding among the berries.

Place blackberries in cold salted water and refrigerate overnight. Drain, rinse gently, and pat dry before using.

Freshly picked berries from trusted local farms often require only a gentle rinse.

Fresh vs. Frozen Blackberries

Fresh berries provide the brightest flavor and texture, especially during blackberry season.

Frozen and thawed berries may also be used and work well when fresh berries are unavailable.

Avoid canned or candied blackberries, which tend to be overly sweet and can overpower the cheesecake.

Blackberry Sauce Texture Options

This topping can be adjusted several ways:

Rustic Compote

Lightly mash the berries with a fork and leave them chunky.

Half-Blended Compote (our favorite)

Blend half the mixture and stir it back together.

Smooth Blackberry Sauce

Blend the entire mixture and whisk in 2–3 teaspoons cornstarch while heating to create a thicker, silky sauce.

The more cornstarch added, the thicker the consistency becomes.
