• 1 4th of an Avocado (I’m out)
• 2 Spinach & Herbs Tortilla Wrap
• Sautéed Onions
• Sausage
• Mixed 3 Eggs and poured into the sausage in the skillet.
• 2 Slice Cheddar Cheese
• Sour Cream

Sliced it with a pizza slicer after it was heated in the panini grill. I ate 3 slices of it and saved the 4th as a snack.

We used a crock pot to cook the roast. Fried the Brussel Sprouts which had a nice smokey crunch.

Au jus is a French culinary term that means “with juice”. It refers to meat dishes prepared or served together with a light gravy, or broth, made from the juices given off by the meat as it is cooked.

So we took the meat juice from the crockpot that had the arm roast and poured it into a pot. Whisked it with heavy cream until it boiled for 10 minutes. Added bacon as a garnish.

Eggs Benedict

Hollandaise Sauce: To watch how to make this you can visit the Food Network and view the entire recipe. Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the Eggs Benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving.

• 4 egg yolks
• 1 tablespoon freshly squeezed lemon juice
• 1/2 cup unsalted butter, melted (1 stick)
• Pinch cayenne
• Pinch salt

To assemble: We placed a stack of ham, followed by a poached egg. Season with salt and pepper. Spoon hollandaise sauce over the eggs. We would have garnished it avocado, but we were out.

My husband is so incredibly talented in creating Eggs Benedict. It was MOUTHWATERING DELICIOUS!!! If you have the patience and the time to make this. You are in for a treat!!!

So what do you do when you visit your extended family and they are serving up burgers and hotdogs for lunch?

Before our drive I did make a limeade which consisted of lime and cold ice water. I knew I was going to have an adult beverage and maybe a dessert. So I decided to eat a burger without the bun, but with all the trimmings. I used a fork and knife to actually slice it. It was very filling.

Champagne Punch

• Champagne
• Ginger Ale
• Lime
• Strawberries

My mother-in-law whipped up the party drink and I enjoyed at least 3. For a similar recipe check out Audrey’s Real Housemoms Blog called “Strawberry Lime Moscato Punch”. The lime is the secret to add that zest and zing to the taste!

For dessert I ate a chocolate cupcake with buttercream frosting from Costco. In the past, I would have been all over this. Now that I have been on Keto, my tastebuds and food cravings have changed. Once I ate it, I could sense my mind warring that I should enjoy eating this chocolate cupcake. It was like the equivalent of feeling “dirty”. Or maybe the built up expectation was flat.

Finally some avocados are ripe today and I was able to use half of one on top of my breakfast today. I shaped it with my spatula to form a slice of pizza.

• 1 pack of Chunk Light Tuna in Water (Premium Wild Caught)
• Spinach & Herbs Tortilla Wrap
• Avocado Oil Mayonnaise
• Ranch dressing
• Half an Avocado
• 1 Slice Cheddar Cheese
• Cucumber

After I placed all of the ingredients on the wrap I folded and tucked the ends to form a burrito. Then placed it in my panini maker. It’s the week we need to go grocery shopping so I try to use the items that we have.

• Put Butter in your skillet to sautéed 3 Onion Rings, 2 Sliced Mushrooms and Sausage.
• Mix 3 Eggs and pour into the Onion Rings
• 2 Grape Cherry Tomatoes
• Goat Cheese

• Chunky Light Wild Caught Tuna

Steam the squash in a bowl with some water at the bottom of the bowl. Place a plate on top of the squash and microwave it for a 2 minutes.

We have been focused on preparing our meals during the week that we had gotten out of our routine of going out as a family. As you are practicing the Keto lifestyle it doesn’t mean that you can’t go out to a restaurant and not find something on the menu to eat. You can find something.

I did have one salted lime margarita with my dinner. In the past when I would eat at Applebee’s I would walk away feeling stuffed. Tonight I walked away satisfied.

• Half Rack Double-Glazed Baby Back Ribs

*With the extra cheese I dipped my steamed broccoli.

Fresh Drinks with Fresh Lime or Lemon Juice

In my second week, I started pouring into a tall glass of water filled with ice. It was practically a lemonade or a limeade, but without the sugar. It TASTES REFRESHING. In fact, I noticed a bit of a boost in the mornings if I drank this first. You can study on the benefits of drinking lemon or lime juice. I don’t recommend brushing your teeth immediately after drinking this. There is no finite study about drinking it cold or warm. Drinking it cold gets me buzzed with an extra zing in my step.

Years ago, I purchased this juicer device at Crate & Barrel. Unlike most hand-juicers, this version uses the pressure of the lid to help twist and extract juice, keeping hands out of contact and squirts into the cup. Strainer traps pulp and seeds, and container with pouring spout holds a half a cup of juice.

Weighed 157.6 lbs | Waist Measured 35 inches

Woohoo! I lost 7.4 lbs and I am still measuring 4 inches less around my waist since I started. REMEMBER, it’s about the inches. The inches lost indicates fat is being used and passing through my body. Which is what I want.

In my first week I had a surprising event happen with being able to slip into my Express Jeans size 10. I haven’t worn these jeans in YEARS. I was able to button with ease.

In the second week, jogging tights are loose and some shirts that I would consider tight in the sleeves are now not so tight. It appears that parts of my body are being targeted faster than others. I was able to overcome some Keto Flu or Ketosis Flu by eating Kalamata Olives, drinking water, eating some meat and of course sleeping. For other insightful information visit Diet Doctor. Not all Keto Facebook Groups are really a Keto Support Community.

Twin Belly

Even though I didn’t loose a single inch this week here is a personal observation that any mother of twins may appreciate. Heck, maybe anyone who has had a baby or two. I often would be so frustrated and hide my midsection with wraps or jackets. My belly would pooch out like I was still pregnant. I would notice it seemed to keep getting higher and pooch out further. This is about 4 or 5 inches above my belly button that it would pooch out. My husband used to say, maybe it was scar tissue. No honey, it’s just fat that needs to go. So I took this photo because there are several things that are happening.

  1. Sleeves fit my arms without loosing circulation.
  2. Buttons are closed and none are giving a peep show.
  3. The pooch is sliming down! It appears to be lowering and forming a slope towards my bellybutton. In the future I will reshoot with this same white button up shirt to see my mid section going with the shirt lines. A week ago, my pooch would be pushing out just under the 4th button.

Energy

No headaches this week. I did notice that I got carried away in cleaning that I did not drink as much water as I should have. My bathroom visits changed a bit, because my body was purging salt. According to Diet Doctor, with decreased carb intake, insulin levels fall significantly. It’s been known for decades that when insulin levels drop, the kidneys excrete more sodium and water, although the exact mechanism isn’t clear.

One last thing, ladies would mostly understand that I do have a sense that my menstrual cycle is coming so I am wondering what the coming days effects would be. Will I experience the normal bloating and the usual symptoms?

Here is a reminder of what I’m doing to reach my goal:

1. Eat foods that are within my list, “How To Look Good Naked With Keto and Beginner Recipes”.

2. Write down what I used and note in hacks or what I thought about it. If I didn’t like it…I’m not going to recommend it or eat it again. (Blog)

3. Take my measurements weekly. I started to do it daily at 7am. Mainly because I needed to form the habit to stay committed.

4. Publish my results at the end of the week. Hopefully on Saturday. This is my third week.

I’m trying to keep the recipes simple. My husband is further along when it comes to marinades, sauces and more. He has been at this much longer than I. Thank you for reading. Let me know if I need to explain something further. Or let me know how are you doing with your challenge.
