Waffles & Scrambled Eggs

Not listing the Waffle recipe because it was made with Coconut Flour. It was not my favorite. There is another recipe below that I would recommend and I included the link. In a hot pan with butter I pour in eggs that I mixed in a cup. Added some pepper.

Used a panini maker to make the steak wrap. Cheddar and 3 grape tomatoes.

Almond Waffles & Scrambled Eggs

Almond Flour to enjoy for Sunday breakfast. For toppings is real butter, strawberry slices, blueberries and whip cream. On the side of scrambled eggs and a cup of coffee with heavy whipping cream.

  • 1 cup almond flour sifted (add more if needed)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon Xanthan gum optional
  • 1 cup heavy cream or heavy cream and a little water
  • 2 Tablespoons oil
  • 3 eggs

Grilled Southwestern Cheeseburger

Seasoned with garlic, salt and pepper on grass fed beef and grilled on open flame. Topped with sautéed onions, cheddar, homemade fresh guacamole and 5 sliced cherry grape tomatoes.

Spread Sir Kensington’s Mayonnaise with a swirl of Dijon Mustard on a Spinach Herb Tortilla Wrap. Slices of marinated grilled steak, avocado, 3 grape tomatoes sliced, organic Mexican shredded cheese and pickles pressed in a panini grill with left over bacon grease.

My creative little breakfast that I made with 3 eggs, 3 diced cherry grape tomatoes, 1 scoop of sour cream, half avocado, sliced cheddar cheese and 2 pieces of bacon. In the pan I used real butter, mixed the eggs in a glass and poured it into the hot pan.

Insert the seasoned brisket. Spread less than a tablespoon of bbq sauce on a Spinach Herb Tortilla Wrap and have it pressed in a panini maker.

On the side is a cup of steamed cauliflower with cheddar cheese with 3 sliced grape tomatoes and half an avocado with sour cream with one of the sliced grape tomatoes.

MICROWAVE HACK: Put cauliflower in a small bowl with 2 tablespoons of water. Cover small bowl with a plate for 2 to 3 minutes in the Microwave. Voila, steamed cauliflower.

Chunky diced @ChappellHillSausage Original Sausage cooked with 3 Eggs in real butter scramble. Topped 1 diced grape tomato with sour cream and cheddar cheese. Half an avocado. Pepper for seasoning.

1 piece of Bacon baked in oven for 10 minutes at 400°.

Spring Mix Salad with 12 Ingredients

• Warm Marinated Steak
• 1 Strip of Bacon
• 2 handfuls of Spring Mix Salad
• 1 Strawberry
• 4 Blueberries
• 8 large Kalamata Olives
• 2 Grape Tomatoes
• 2 florets of Cauliflower
• 2 florets Broccoli
• 1 Boiled Egg
• 2 Mushrooms

Pour or squirt Ranch Dressing across the entire plate.

Keto Meatballs in Alfredo Sauce

• 1lb Sausage
• 2 Eggs
• 1 Cup of grated Parmesan cheese.

Mix together and toss in the oven at 375°.

When internal temp reaches 160° it’s done.

For the Alfredo Sauce
• Melt 2 tbsps of butter at medium-low heat
• Add half a stick of cream cheese (8oz)
• Add in about 3-4 tbsps of heavy cream.
• Stir until it combines.
• Add in some shredded parmesan
• Add Italian seasoning
• Add Salt to taste.
* Add more cream if it gets too thick.

• Put real butter in a hot pan
• Mix 3 Eggs and pour into hot pan
(Use spatula to fold eggs when cooked to stack.)
• 2 Pieces of Bacon
• 1 Charred Grape Tomato

• Shredded Monterrey Jack Cheese
• Sour Cream
• Valentina Salsa Picante

Weighed 159.4 lbs | Waist Measured 37.5 inches

Woohoo! I lost 5.6 lbs and measured to 1.5 inches around my waist. What is significant this morning is that it is not about the pounds lost. It’s about the inches. The inches lost indicates fat is being used and passing through my body. Which is what I want. The weight could be just “water weight”. It’s common in the beginning of a Keto lifestyle that you first drop water weight. Apparently, our bellies tends to retain more water when you eat carbohydrates. Either way, I was able to slip in my Express Jeans size 10. Weeks ago, there was NO WAY I was able to even button them. I haven’t worn these jeans in YEARS. I was able to button with ease.

The scale has no way of knowing the other details about my body, feelings or skin appearance. So even if it appears that I’m dropping pounds. I have to remember to use the tools to reach my goal. Overall I feel good. Full. Satisfied. I haven’t really needed an extra snack…and at some point during the week. I just was not “hungry” to eat dinner. When I got out of my routine…I do remember eating a few Kalamata Olives. Earlier in the week I had a glass of wine. Along with my meals I had primarily cold iced water or drank water during the day. I did periodically drink coffee that I made with a French Press then mixed with heavy whipping cream. I did twice during the week add Whip Cream.

Here is a reminder of what I’m doing to reach my goal:

1. Eat foods that are within my list, “How To Look Good Naked With Keto and Beginner Recipes”.

2. Write down what I used and note in hacks or what I thought about it. If I didn’t like it…I’m not going to recommend it or eat it again. (Blog)

3. Take my measurements weekly. I started to do it daily at 7am. Mainly because I needed to form the habit to stay committed.

4. Publish my results at the end of the week. Hopefully on Saturday. This is my first week so I ended up adding a couple of extra days.

I’m trying to keep the recipes simple. My husband is further along when it comes to marinades, sauces and more. He has been at this much longer than I. Thank you for reading. Let me know if I need to explain something further. Or let me know how are you doing with your challenge.
