Avocado Brownies

Ingredients:

  • 2 medium, ripe avocados (skin and pit removed)
  • ½ cup pure maple syrup
  • ¼ cup raw granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • ½ cup whole wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt or a pinch of sea salt
  • ½ cup semi-sweet chocolate chips or cacao nibs (optional)

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8 x 8-inch baking dish and set it aside.
  2. Blend Wet Ingredients: In a food processor, combine the avocado, maple syrup, and sugar. Blend until smooth. Add the eggs and vanilla extract, then mix until fully integrated, ensuring you scrape down the sides for an even blend.
  3. Combine Dry Ingredients: Add the whole wheat flour, baking soda, salt, and cocoa powder to the food processor. Blend until the mixture is well combined.
  4. Add Chocolate Chips (optional): Turn off the processor and remove the blade. Gently fold in the chocolate chips or cacao nibs using a spoon or spatula.
  5. Bake: Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove the brownies from the oven and allow them to cool in the pan before cutting into squares. Enjoy!
