• Put butter in a pan.
• Mix 2 Eggs and pour into pan.
• Take the spatula roll and fold the sides in. Then flip to seal.
• Mild Cheddar Cheese on top.
• 1 Slice of Avocado
• Sour Cream
• Valentina Salsa Picante

Almond Waffle

I don’t have a photo because I took the left over waffle that I had from last weekend. Toasted it too long so it was not what I would consider picture worthy. However, I did add extra butter. And I added some blueberries and some whip cream. I also had a cup of coffee with heavy whipping cream. Below is the recipe.

  • 1 cup almond flour sifted (add more if needed)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon Xanthan gum optional
  • 1 cup heavy cream or heavy cream and a little water
  • 2 Tablespoons oil
  • 3 eggs

Friend Steak Dinner with Keto Sides

I don’t have a photo of my dinner plate. I was a bit distracted with adult conversation and our children playing together. Our friends prepared a very nice meal and I was still able to eat well, I did enjoy a gooey brownie and a margarita.

My husband and I worked on the 2 side dishes. We used a Cheese Grater to grate Cabbage for the Keto Coleslaw. Since we were visiting friends, my husband added Swerve a sugar replacement to add a little sweetness to it. Be sure to check out the Keto Coleslaw it was a tasty dish!

For lunch my husband surprised me with one of my favorite ingredients. SHRIMP!!! What goes great with shrimp. ZOODLES!!! For some reason we only had a couple of zucchinis left to make for this dish to split amongst the family. If you want a big bowl full you would need many more.

• Pour 3 Mixed Eggs over the @chappellhillsausage and butter

Arm Roast In Au Jus Sauce With Brussel Sprouts

We used a crock pot to cook the roast. Fried the Brussel Sprouts which had a nice smokey crunch.

Au jus is a French culinary term that means “with juice”. It refers to meat dishes prepared or served together with a light gravy, or broth, made from the juices given off by the meat as it is cooked.

So we took the meat juice from the crockpot that had the arm roast and poured it into a pot. Whisked it with heavy cream until it boiled for 10 minutes.

So since I enjoyed the BISON MEAT for lunch yesterday. I decided to give it a go for breakfast by making mini balls. Not the same enjoyment with Bison meat. Would rather have the @chappellhillsausage.

Also…I started doing stacks or layering my eggs because it is easier to break and scoop all of the ingredients.

Almost Fishy

Sometimes I play with my food…I was trying to create a fish shape with breakfast. It wasn’t quite there. Overall it tasted good.

• Smokey Honey Ham in butter
• Pour 3 Mixed Eggs
• 1 stripe of Crispy Bacon
• Valentina Salsa Picante
• Half of an Avocado
• Sour Cream
• 1 slice of Cheddar Cheese

• 1 pack of Chunk Light Tuna in Water (Premium Wild Caught)
• Spinach & Herbs Tortilla Wrap
• Ranch dressing
• Half an Avocado
• 1 Slice Cheddar Cheese
• 7 Blueberries
• 2 Tablespoon of Kalamata Olives
• Sautéed Green Beans in Sea Salt, Olive Oil and Pepper

After I placed all of the ingredients on the wrap I folded and tucked the ends to a burrito. Then placed it in my panini maker. I can always improve on my folding the ends . Overall, I enjoyed it.

Fresh Lime Juice

After, I squeezed juice on Thursday and drank it straight from a bowl. I decided to do it again, but this time I poured into a tall glass of water filled with ice. It was practically a lemonade, but without the sugar. And it TASTED REFRESHING. I believe I will have to buy some limes and make this a daily drink.

Weighed 158.4 lbs | Waist Measured 35 inches

Woohoo! I lost 6.6 lbs and measuring 4 inches less around my waist since I started. REMEMBER, it’s about the inches. The inches lost indicates fat is being used and passing through my body. Which is what I want.

Last weekend, I had a surprising event happen with being able to slip into my Express Jeans size 10. Weeks ago, there was NO WAY I was able to even button them. I haven’t worn these jeans in YEARS. I was able to button with ease.

Even if it appears that I’m dropping pounds. I have to remember to use the Keto tools to reach my goal. It’s becoming a pattern now that I am primarily eating two meals a day such as breakfast and lunch consistently. In the past, I have always been satisfied eating the same thing mostly everyday. Eating fresh foods or preparing foods daily I am hoping to master soon. Some vegetables don’t last long as others, which is why my meals change daily. It’s a balance to buy what you will eat and use it too.

My Clothes

My jogging tights I noticed are loose. And some shirts that I would consider tight in the sleeves are now not so tight. Some dresses that were tight around my waist are now fitting well. It appears that parts of my body are being targeted faster than others. Overall, I’m pleased with how I am progressing naturally. I’m kinda stoked how things are going and I have only been doing this for two weeks!!! No crazy pills. Or having to spend months in gym class.

Headaches and Fatique

For a few days, I had some mild headaches and fatigue. My husband would refer to it as Keto Flu or Ketosis Flu. I’m not sure that I would say that I mastered it with some sort of kill switch. It helped eating Kalamata Olives, drinking water, eating some meat and of course sleeping. If you visit Diet Doctor, I’m sure there is helpful information that can give you some knowledge how to overcome it.

On Thursday I did squeeze some fresh lime juice and drank it straight. On Friday, I squeezed another lime and poured the fresh lime juice into a tall glass of iced water. And I’m totally loving it!!! It’s just like lemonade to me, but without the sugary taste to it.

I believe the coffee helps tremendously when it comes to getting the fat out of my body. It’s crazy to actually say, “I am a coffee drinker.” If I would have been transported back in time to say that I would drink coffee multiple times a week, with no sugar or milk I would have laughed hysterically.

I use a French Press to make a fresh cup of coffee then I pour heavy whipping cream.

I’m happy with my current measurements. Really surprised and hope that this inspires you to start your fat loss journey.

Keto Facebook Groups
One disappointment that I will share is there are a few Facebook group pages out there that claim to be a Keto Support Community. You have to be careful in what you are reading. There are those who believe they are eating a Keto lifestyle, but they are NOT. It’s understandable that there are people who go through slumps – maybe they are discouraged and then it becomes a yo yo diet. If you are looking for accountability or support you may have to connect with a real person. Such as your spouse or bff.

Here is a reminder of what I’m doing to reach my goal:

1. Eat foods that are within my list, “How To Look Good Naked With Keto and Beginner Recipes”.

2. Write down what I used and note in hacks or what I thought about it. If I didn’t like it…I’m not going to recommend it or eat it again. (Blog)

3. Take my measurements weekly. I started to do it daily at 7am. Mainly because I needed to form the habit to stay committed.

4. Publish my results at the end of the week. Hopefully on Saturday. This is my second week.

I’m trying to keep the recipes simple. My husband is further along when it comes to marinades, sauces and more. He has been at this much longer than I. Thank you for reading. Let me know if I need to explain something further. Or let me know how are you doing with your challenge.
